Recipe: Lemon Basil Avocado Dressing

Ingredients
- ½ ripe avocado

6 tbsp (or ⅜ cup) oil of your choice (equivalent to 3.15 fl oz)

1 small bundle fresh basil (about 1.13 oz or roughly 1 cup packed leaves)

1 clove garlic, peeled

1 ⅔ tbsp lemon juice

⅔ tsp lemon zest (about the zest of ½ a lemon)

6 tbsp (or ⅜ cup) water (equivalent to 3.15 fl oz)

1 ½ tsp kosher salt
Instructions

Scoop the flesh of the avocado into a blender or food processor.

Add the basil, garlic, lemon juice, lemon zest, water, oil, and kosher salt and blend on high until smooth and creamy. Scrape down the sides as needed to ensure everything is fully incorporated.

Taste the dressing and adjust salt or lemon juice as needed to suit your preference.

Use immediately, or store in an airtight container in the fridge for up to 3 days.
