Recipe: Honey Vinegar Brine

From our Brined Chicken and Butternut Squash meal, this savory-sweet brine delivers flavor and tender, juicy chicken every time.

Ingredients

Scale
  • ½ cup apple cider vinegar
  • ½ cup honey
  • ½ cup kosher salt
  • ½ cup water
  • 4 teaspoons minced garlic
  • 4 teaspoons whole peppercorns
  • 4 sprigs fresh rosemary (keep whole) 

Instructions

  1. Mix all ingredients until well combined. 

Note: This recipe makes enough brine for 4 bone-in chicken breasts (2 ½–3 lbs of boneless chicken).

To use: 

  1. When ready to brine, stir 1 ½ cups of water into the prepared brine.
  2. Pour it over the chicken, cover, and refrigerate.
    • Bone-in: 24 hours

    • Boneless: 8–12 hours

  3. Before cooking, discard the brine and pat the chicken dry thoroughly.
