Ingredients

Scale
  • 2 tbsp minced garlic
  • 2 tsp kosher salt
  • 1 tsp black pepper
  • 1/4 cup apple juice
  • 3/4 cup tamari (soy sauce)

Instructions

  • If you’re using fresh garlic, finely mince the garlic. 
  • Mix all the ingredients in a large bowl or container until well combined.

Notes

  • This recipe makes enough brine for about 1.5 pounds of chicken. To marinate, let the chicken sit in the brine for at least 5 minutes, or up to 8 hours in the refrigerator. When you’re ready to cook, remove the chicken from the brine, discard the excess liquid, and pat the chicken dry before pan-cooking or grilling.
