 The Story Behind Kate’s Plate: The Salmon Caesar Salad

Let’s go on a journey through the creation of one of our beloved meal kits here at Kate’s Plate: the Salmon Caesar Salad. It’s a dish that’s been a staple on our menu for over nine years and is one of my husband and family’s favorites. 

The Inspiration

It all began simple enough. I love Caesar salad. In particular, I’ve always had a soft spot for a well-made Caesar salad and when out at a restaurant, I’ll order a cold Caesar with grilled or roasted salmon on top as a really safe choice…and it never disappoints. And thus, the idea for our Salmon Caesar Salad meal kit was born. Here at KP, we like to make meal kits of things we already love to eat and bring it to your home!

Here’s what makes it so tasty and something you should try: 

    • Homemade Ciabatta Croutons: Ok, one of my life’s missions is to teach everyone on the planet how to make homemade croutons. Toss the ones from a bag! Nothing beats freshly made croutons, I double dog dare you to try them on your next salad. It is a little bit of effot that makes your salad next level. Cube, cut or tear your ciabatta or good crusty bread into small pieces (the smaller the better generally), toss well with olive oil and salt. Roast on a baking sheet at 400 degrees until toasty. 
    • Cashew-Based Caesar-Like Dressing: Our dressing is creamy, super-garlicky, and made from blended raw cashews to give it that rich, smooth texture without relying on dairy.
    • Salmon from Foremost Seafood: Finally, the star of the show—the salmon. 

 

  • Also, roasted broccoli, shaved parmesan, and strips of roasted red peppers finish off the salad! 

 

Top Two Salad Tips:

  1. Keep your lettuce nice and cold. After chopping, washing, and spinning your lettuce, place it in your salad bowl, cover it, and let it chill while you prepare the rest of your meal. When it’s time to serve, toss the chilled lettuce with your other salad ingredients and dressing for the best flavor and texture. 
  2. Toss salad and toppings together with the dressing before serving.This is how I serve all my salads, whether it’s everyday dinner or entertaining guests. I prefer it over layering items in each bowl. But hey, you do you—find what works best for your taste and your family. I get it if you want them to choose their dressing, but I am not going to lie- I already know which one is best so I just do that. 🙂
