Basic Chicken Thigh Brine

My very basic ‘recipe’ for grilled chicken thighs at home. Add any fresh herbs that you have at home, especially if they go with the dish you are making. Rosemary is delightful!

2 lbs boneless skinless chicken thighs

2 cups water 

2 tablespoons red wine vinegar 

2 tablespoons kosher salt 

2 tablespoons honey 

2 large garlic cloves, minced



Mix ingredients together in a large ziplock bag or bowl. Submerge chicken thighs, let sit for 1-4 hours grilling. Drain brine, pat dry, then coat lightly with olive oil before grilling. Grill over medium heat for 7-10 minutes per side until internal temp reaches 165 degrees.
