Coconut Curry Stew
Carrots, parsnips, sweet potatoes, cauliflower, and apples go into this hearty stew with coconut milk, vegetable stock and sweet (mild) curry powder. Topped with fresh cilantro, and served with a simple side salad of greens, chickpeas, pepitas, and a Gujarati dressing made with black mustard seed and lime. An easy, vegan weeknight meal.
