My basic recipe for grilled chicken thighs at home. Add any fresh herbs that you have at home, especially if they go with the dish you are making. Rosemary is delightful! *Note* This is a strong brine, meant for shorter brining time (1-4 hours), but if you’re making a standard brine, to be left for 24 hours or more, reduce the sugar and honey by half, and add no vinegar at all.
2 lbs boneless skinless chicken thighs
2 cups water
2 tablespoons red wine vinegar
2 tablespoons kosher salt
2 tablespoons honey
2 large garlic cloves, minced
Mix ingredients together in a large ziplock bag or bowl. Submerge chicken thighs, let sit for 1-4 hours grilling. Drain brine, pat dry, then coat lightly with olive oil before grilling. Grill over medium heat for 7-10 minutes per side until internal temp reaches 165 degrees.
