‘Almond Joy’ Energy Squares
Coconut-y, almondy, chocolatey…just like an Almond Joy Bar. This makes a huge batch. You’re welcome.

For the mixture:
- 2 1/2 cups almond butter
- 1 3/4 cup honey
- 2 tablespoons quality vanilla extract
- 3 1/4 cup rolled oats, quick cooking work well here
- 3 1/3 cup fine shred, unsweetened coconut flakes
- 2 cups protein powder
- 2 cups cocoa powder
- 1 cup sliced almonds
- 1/3 cup coconut flakes
In a very large bowl, mix all ingredients for the bars together well. Line a rimmed baking sheet with parchment paper and press the mixture firmly into it. The sprinkle with almonds and coconut on top and press into bars well so it sticks.
Cover and refrigerate for 4 hours. Then remove the entire block and cut into 2″ or 3″ squares. Store in fridge or freezer.
