2 tbsp minced garlic
2 tsp kosher salt
1 tsp black pepper
1/4 cup apple juice
3/4 cup tamari (soy sauce)
Instructions
If you’re using fresh garlic, finely mince the garlic.
Mix all the ingredients in a large bowl or container until well combined.
Notes
This recipe makes enough brine for about 1.5 pounds of chicken. To marinate, let the chicken sit in the brine for at least 5 minutes, or up to 8 hours in the refrigerator. When you’re ready to cook, remove the chicken from the brine, discard the excess liquid, and pat the chicken dry before pan-cooking or grilling.
