Chimichurri Sauce

Ingredients

  • 2 tbsp (1/31/2 bunch) fresh cilantro
  • 6.5 tbsp (1/21 bunch) fresh parsley
  • 3 medium sized garlic cloves
  • 6 tbsp red wine vinegar
  • 1 tsp salt
  • 1 tsp dried oregano
  • 1/2 tsp black pepper
  • pinch of red pepper flakes (to taste)
  • 1 cup good quality olive oil

Instructions

  1. In a food processor, blend all the ingredients with a bit of water.
  2. Once mostly minced, pulse with olive oil until it is fully incorporated. 
  3. Taste and adjust salt, black pepper, and red pepper flakes to your liking.

Notes

Store in an airtight container in the fridge for up to five days.
